We’re getting hungry just thinking about it. Ryan Seacrest’s longtime friend and famed Michelin star-awarded chef Josiah Citrin stopped by the studio on Friday, May 17, and dished on his grilling tips and tricks from new cookbook, Charcoal: New Ways to Cook with Fire.
Citrin is a culinary expert and veteran of Los Angeles's gourmet dining scene, with more than 25 years of experience and numerous hit spots under his belt, including Venice Beach's Charcoal.
“We like to use lump charcoal, oak and mesquite,” Josiah dished of his tip for fellow grillers. “But just a little mesquite, not as much, so it’s not too smokey. We never want to overpower whatever we’re grilling.”
His other tip? While cooking meats such as steak, turn it every 30 seconds.
